The Nduja Miso at Kona is his most recent creation, a ramen that speaks to the internationality of himself, of Italy and Denmark, and of food itself. It all started some time ago when our co-founder and OG chef Philipp Inreiter left his Noma days behind him to travel Japan. After a passionate, strong, and hot love affair with ramen, he decided that Copenhagen was in serious need of this food — intense broth, delicious noodles, and rich toppings that speak right to your soul and deliver some urgent warmth amidst the Danish weather. Things have changed by then, but only for the better — the queue got longer, the team bigger, and the menu greater. But what has not changed are our roots. Just like on day one, we are strongly connected to Japanese cuisine and culture and are on a mission to explore what ramen means within a European and Danish context. However, such delicious noodle dishes also share many things in common.
