Situated on the ever-bustling thoroughfare of Deansgate, considered by many to be the real epicentre of Manchester, the intimate cafe has a minimalist interior aesthetic, simple whitewash contrasting a single wall of eye-catching dark blue-grey, with light, natural woods adding to the tone. Every aspect of the coffee making process is taken into full consideration here, and that starts with remineralising the water, replenishing it with vital nutrients that are not only healthier for you, but also add depth. Dosage, yield, temperature control, pressure profiling — all these differentiating factors are understood by the staff, including extraction percentages which are judged using a refractometer, ensuring consistency of flavour each time you visit. Coffees themselves are separated into different categories, ranging from Familiar to Fruity, and then Funky. Drinks aside, organic, sustainably sourced brunch dishes are available, with the menu regularly changing to reflect the availability of seasonal ingredients.
