Using not one but two ingredients that cannot be purchased and have no value other than crafting, each keg represents a time investment from the player. This makes it remarkably hard to scale up the number of kegs to maximize profits across the entire breadth of the farm's produce. However it's not just that. Let's set aside for a moment even discussion of base crops, because the idea of getting together all the resources needed to pair up kegs with all crops grown outside each season is absurd and unrealistic. Preserves jars can be bought for , and will earn you back nearly 4k over the course of the year, so they actually have the potential to be used for everything. Where they are actually in competition with each other is in regards to the crops in your greenhouse. Of course I'm not saying that your greenhouse shouldn't be turned into an ancient fruit winery, that's obviously the most profitable use of that space and the most profitable overall. Best case scenario to have a full greenhouse of ancient fruit plants actively churning out wine is really winter of year 2, at which point again the game is almost over. What I'm trying to say is in the meantime, don't discount the power of the preserves. Don't just sit there on stacks of thousands of wood and stone and hundreds of coal, waiting for the chance to make kegs!

While looking at the selling price for the items, you may think that kegs are better. I don't consider the game over until I'm done with whatever goal I had for that save, large amounts of most things will get you rich reasonably quickly when you think about it. In terms of making kegs versus preserves jars - This playthrough I'm getting tons and tons of coal without needing to use it in too many things so it is a lot easier to make jars.

Wood is found by chopping down trees; Stone is found by breaking rocks with the pickaxe. I don't like how quickly artisan goods make you rich, so I only have a few dozen of each and I don't use ancient fruit or star fruit in either of them. I used my basement to keg cheese on the jelly farm, so I didn't optimize for profit there. If you don't like mining for ore, you might want to try a jelly farm.
