I remember instantly loving the meal and the simple yet bold flavors and spices. So when I recently visited Israel and Jordan, where shakshuka is almost a national dish, it was the meal I was most eager to dive into, once again. I spent two weeks traveling throughout Israel and Jordan on the most glorious trip and was able to enjoy shakshuka many times over. You can also add feta or goat cheese and adapt it to your taste.

Vegetarian shakshuka is a one-pan egg and tomato dish perfect for breakfast, lunch, or dinner. It's a toss-up as to whether it's more fun to say "shakshuka" or the name of its Turkish counterpart, menemen , but both are incredibly tasty, straightforward dishes that should be in your arsenal. Though it is North African in origin, today shakshuka is popular throughout the Middle East particularly in Israel, where it may as well be one of the national dishes and in hip neighborhood diners all over the coastal U. Given its versatility, it's easy to see why. It's quick; it's simple; it's easy to scale up or down; it works for breakfast, brunch, lunch, dinner, or a midnight snack; and it's so primal that it barely needs a recipe. Before I started testing for this one, I'd never used a printed recipe as more than just a basic guideline. Shakshuka is almost built for riffing. Of course, it helps that it's also downright delicious. Like pizza, shakshuka is one of those dishes that are still pretty darn good even at their worst. But there's delicious, and then there's delicious.

Shakshuka may be at the apex of eggs-for-dinner recipes, though in Israel it is breakfast food, a bright, spicy start to the day with a pile of pita or challah served on the side. It also makes excellent brunch or lunch food. First you make that sauce, which comes together fairly quickly on top of the stove, then you gently crack each of the eggs into the pan, nestling them into the sauce.
