Her shop features a lemon-cream and vanilla-bean ice cream made with water buffalo milk from the McClintock farm in Comox and driven down to Victoria by the farmer each week. They also feature coconut milk vegan ice creams, using locally distilled vanilla, roasted espresso and seasonal fruits. All other ice cream is made with dairy from the Cowichan Valley and Saanich Peninsula. Parachute Ice Cream opened in late May among the burgeoning breweries and coffee roasters of Rock Bay and as the beacon of another food trend on the rise in Victoria.
