Take the elevator to the seventh floor and you enter into an open-plan space with large windows overlooking the city skyline. If Gwyneth Paltrow were to be spotted sipping a green tea she would fit right in. There is also a full drinks list including classic cocktails and a seasonally changing menu of shared plates and light bites. The latter are served in threes and have been created to complement Champagne in particular. Oysters served with a traditional shallot vinaigrette are the delicious accompaniment. From the menu, we also choose Gnocchi which presents more as a mini blini with creamy aubergine garnished with a thin seaweed crisp.

In the lead up to the mid week picnic, the weather had been all sunshine and blue skies! Welcome to Scotland! There is an air of elegance and sophistication with the lounge's chic interior setting the tone for a wonderful time sipping champagne or a dram. The extensive champagne list boasts an impressive selection, from renowned labels to hidden gems waiting to be discovered. We were luckily to have been seated here and it really did provide the ultimate Edinburgh backdrop for our picnic. Tea and coffee can be ordered but you will need to pay for these separately as they are not included. The picnic table arrives and it is laden with sweet and savoury goodies. Buttermilk and Golden Syrup Scones with clotted cream and strawberry jam. The Pistachio and Rose cake was not only beautiful to look at, it also tasted beautiful with a light delicate flavour of rose and the pistachio crunch. The meringue kisses were sweet and melt in your mouth, I loved the Apricot daisy cookie as they remind me of stained glass but unfortunately the whisky posset was over whipped and slightly lumpy; however the flavour was there and worked well.

Most likely, that stretch of water was a poisonous soup, made danker by the executions, DIY sewage management and, some say, witch dooking, that took place. Anyway, this space looks like a BoConcept showroom, with art books, white marble tables and a rooftop view which makes it seem like it is squaring up to The Balmoral. We eventually managed to get hold of a harassed looking waitress, who was frantically multitasking, and ordered a few of their Small Plates. Just three rather lovely airy bites. Crunch crunch crunch gone. It was decorated with a vortex of spicy red pepper jus, toasted seeds and crumbled up shards of cheesy tuille.
Perfectly suited for today's intrepid traveller and primely placed in the heart of the Scottish capital. A modern take on Baronial materiality and composition provides the inspiration behind our unique guest rooms. Natural materials such as white oak and textured stone provide a tactile canvas for modern design classics, alongside custom-made furniture and handcrafted pieces. Charming wooden shutters are inspired by the original window fixtures of the historic Old Town and create a warm, homely atmosphere, which is further encouraged by the use of fabric wallpaper and soft woollen accents. Guest room bathrooms have been designed as modern ante-rooms, finished in luxurious marble, featuring solid stone basins and rainfall showers by Via Bizzuno accompanied with amenities by vegan brand, Votary.
