Unlike the earlier generation Moodys, which used a lot of exposed GRP and laminate, the Moody 31s have a fairly traditional and 'woody' interior. A Moody 31 is considerably less skittish than a Westerly Fulmar, and I'm not sure I would call a Fulmar skittish - they were for decades widely respected as the best yacht for training beginners because they extracted reasonable performance from a very stable design. The M S31 is a completely different boat which sails even better than the M31 and has much more accomodation, basically it's a bigger boat if the same length.
