Today it is his direct descendant, Yves Assier from Pompignan, who is at the origin of the new philosophy which animates the distillery and the Habitation du Simon taken over by the brand. This distillery is also equipped with a fairly unique Charentais copper still, complete with 7 trays which bear the sweet name of "Belle Aline". In a marvelous setting amidst nature and the fields of canes, a small team is active in making each stage of the development of these great rums: from the field to bottling. Each operation is done by hand with the utmost care. We are here in hand-sewn!
