I love it, I always have — and melting it to dip strawberries in is my favourite quick dessert ever. You can, of course, use other cocoa powder — all cocoa powder will work. I used these gorgeous purple baking cups from Iced Jems , as I wanted to stick with the purple theme.

Please see my disclosure for more details! If you have followed me for a while you will know how obsessed I am with hot chocolates. They are cosy, and heavenly, and because its the winter festive season I thought they were the perfect cupcake to celebrate with. Honestly, I started going to cafes purely for hot chocolates as one point because I was just obsessed. I adore them. I was a regular at a few coffee shops and they learnt my hot chocolate order very quickly. For the cupcakes I followed the same idea as my normal chocolate cupcakes because it really is a simple switch. I say to use good quality hot chocolates or even high cocoa content ones because of the flavour and sweetness. A lot of hot chocolates have a tonne of sugar added in, and this can become too sweet. I use a simple chocolate mixture of butter, sugar, self raising flour, the hot chocolate powder and eggs. I am the person that would drink a hot chocolate in the middle of summer though, so of course these beauties can be made whenever.

Please see my disclosure for more details! So the time has come, to morph my chocolate fudge cake into the very sort after chocolate fudge cupcakes. These are the most incredible cupcakes, so here they are. If you are after something delicious, but easier and more basic, then check out my chocolate cupcakes recipe! This sort of cake mixture is a lot thinner once you have made it, in comparison to a normal cake batter like a chocolate Victoria sponge. When I make it, I really just use my hand and a whisk and a spatula… there is no need for an electric mixer for these cupcakes as the batter is so easy to mix together. Melt the chocolate and butter, add in the dissolved coffee, whisk all the dry ingredients together, and whisk the eggs, vanilla and buttermilk together and you have a cake!

Yes, that is right, I thought I would start off with an absolute bang and do something that I get requests for over and over all of the time… this beauty of a recipe. I have many gingerbread recipes on my blog such as my gingerbread loaf cake , my gingerbread millionaires shortbread , and my gingerbread trifle just to name a few… but cupcakes? Cupcakes are where it is at as they are easy, simple and delicious. A gingerbread cake is meant to be denser, fudgier in a way and just absolutely perfect for the colder weather… and these gingerbread cupcakes emulate that exactly. This sponge uses butter, dark brown soft sugar, golden syrup, and black treacle melted together in a pan — this bit is important as it makes sure that everything will incorporate really well. I use dark brown soft sugar and black treacle as I want the deep flavour, but these can be switched to light brown soft sugar and just golden syrup if needed. The mixture uses self-raising flour in comparison to plain flour as the raising agent comes in handy for cupcakes — and I love it slightly lighter in cupcake form.

Fluffy sponge, light buttercream and a delicious chocolate drizzle — what more could you want?! Okay so maybe that is a slight reach, everyone has their own favourite recipes but honestly, this is my go-to chocolate cupcake recipe that I use when baking for absolutely any occasion, or just for a family gathering, or just myself — honestly they are utterly delicious. The cupcakes are insanely light and fluffy, whilst also being moist. It means you can eat the whole cake and not feel guilty! I use butter, eggs, sugar, flour and cocoa powder to create my beautiful sponge — its nice and simple! I use this cocoa powder as it creates a delicious taste and I love it! When I was younger I would simply decorate a chocolate cupcake with melted chocolate or a simple chocolate ganache — but I find the ganache is better for an indulgent cake, whereas this buttercream recipe is simple yet yummy for any sort of cake, cupcakes, or celebration cake!

Normally for cupcakes I just add it in afterwards — but theoretically it may work the same! Prep Time: 45 minutes minutes. Would these come out ok with Flora Buttery do you think?
