This rustic soup is traditionally made with dried radish greens, but this recipe from chef Dennis Lee of California's Namu Stonepot restaurants features fresh ones. Some Korean and Asian markets sell young radishes, which are predominantly the greens—perfect for making this dish. Lacinato kale is a good substitute. When boiling, put the radish greens in put them in stem-side first. Blanche them with lid on for minutes. Put blanched greens through a strainer. Wash them under cold water. Then give them good squeezes and take out the excess water. Chop the radish greens into small bite-sized pieces. Set aside Put 5 cups of anchovy-kelp broth into a large pot. Bring it up to a boil. Once the broth is boiling, place in 2T of deonjang paste. Then put the diced radish greens in. Place lid on.
Put it over guk green, put some kimchi on the side, and you've got a quick, easy, light dinner for nights when you just want to keep things simple and no-fuss.

This version is spicy and savory. Guksu is also a special-occasion dish because Koreans traditionally associate long thin noodles with longevity, so we often serve it at birthday parties, to wish for a long life, and at weddings, to wish for a long marriage. I learned this version from a friend of mine in Korea who came from Gyeongsang province, at a time when I lived in Jeolla province. That way uses anchovy or beef stock with hot pepper flakes and chopped green onions as a garnish. To make it look fancy, sauteed zucchini, marinated and cooked beef strips, and a pan-fried egg stips gyeran-jidan can be added over top. This version uses a kimchi mixture for a spicy kick, and uses my special anchovy stock. Dried anchovies, kelp, radish, and onion give plenty of flavor and umami and a bit of sweetness, which makes it a good base for many other dishes, too.

I make a beef broth in this recipe, but you can use any meat you prefer, or use seafood, or just make an anchovy stock or kelp stock. The whiteness of the soup symbolizes a clean, fresh start to the new year, and the disc-shaped rice cakes look like coins, so they symbolize a wish for upcoming prosperity for anyone who eats them. I think the real key to this soup is i making a clear, delicious broth, which takes some care and attention to do.
