Inspired by the glamour of 20th-century Chicago, Gimlet at Cavendish House is the recent brainchild of acclaimed chef Andrew McConnell. Reposing in a large, brightly lit building in central Melbourne, the restaurant is hailed as a space for all seasons and reasons. The comfortable leather booths and exclusive high tables invite both large family lunches and intimate romantic evenings. An upstairs private dining room is also available to parties of up to 12, offering seating on the mezzanine overlooking the bustling restaurant. The wood-fired oven is the centrepiece of the open kitchen, spinning out classics such as dry-aged Muscovy duck breast with Corella pear and liquorice, and grass-fed tomahawk. Mainds has a wealth of experience in the hospitality industry and serves as a testament to where hard work and hunger can get you with the right workplace support. Originally from Scotland, Mainds spent three years at the two Michelin starred Andrew Fairlie, where the focus was on local produce from the surrounding Perthshire County. We stopped by to see what life is like at the popular Melbourne restaurant. As we sit down to chat, a fresh produce delivery arrives from Ramarro Farm — a Victorian grower based near Monbulk. Mainds excuses himself to catch up with Oliver Shorthouse, owner and farmer at Ramarro, who brings boxes of vibrant colours and smells past us and sets it down on a bench. The pair inspects locally grown lettuce, giant zucchinis, eggplants which Shorthouse harvested kg of and more.
