I keep seeing people talk about their companions dying, but I didn't even know it was possible. The only thing that has ever happened to me is that my can skyrim followers die will get beat up, kneel down for a few minutes unable to do anything, then jump up and start fighting again. This happened after getting hit by a giant too, so how can they die? When they kneel they're low in health but still above zero.

If they are attacked by NPC until their health is depleted they go into a protected down state which then makes enemies not target them but they can still be killed by splash damage from spells or being hit by them if trying to hit your character who is behind them. I know you did not mean literally die but for some one new to the game saying if an NPC kills them they will be fine can be a bit misleading as it can actually happen. As for the question dead is dead in this game. Reloading before they died is the only way to get them back usually. There are a few essential followers who cannot die and are an option should you want that.
