The BX stories and the quirky characters were an endearing and central part of our story, and connected us to the history of the land in a tangible way. As we look ahead towards our 10th vintage this season, and open our new restaurant, we are turning the page to a new chapter. Our focus is shifting to re-emphasize the quality of the artisan cider, the 3rd generation transitional organic orchard, and the exciting contemporary farm-to-table menu celebrating local purveyors. As we thought about a new brand it was key that we selected something that not only spoke to, but also strengthened, the connection we have to the land. Enter Cambium - the living layer between roots and leaves in trees. Our new logo depicts both the cambium layers and a nod to an apple shape.

The family business, owned by Dave and Missy Dobernigg, are turning the page on a new chapter, changing the name to the Cambium Cider Co. The new labels are watercolour renditions of cross-sections from Spartan trees from the third generation orchard, each tree ring depicting the cambium layer from that year of growth, showing each year of provision from the tree. The company is welcoming Christian Scott as chef and part owner in the restaurant. Scott has worked with the company for two seasons and prior to that, in Okanagan winery restaurants and European kitchens. The heart of the restaurant features a wood-fired grille, allowing for a contemporary yet rustic menu, and a departure from pizza. After being shut down most of the season for construction on the new space, the cidery is ready to slowly open part of the new indoor dining space this weekend. The restaurant has limited dinner reservations on a small soft-opening menu for the first half of September. Reservations for the second half of September will open on the 18th. The business will also be opening to bookings in late September for small events and Christmas parties starting in late October. Going forward, the business hours will be: Thursday to Saturday: for dinner reservations required online and Friday to Sunday: cider and charcuterie — walk-ins.

The orchard at Cambium Cider Co has been growing apples since Today they grow more than two dozen varieties including modern dessert apples, nearly forgotten heritage cultivars, and vintage cider fruit. These sugar-laden fruits are hand-harvested and slowly fermented into delicious craft ciders which they blend, bottle, and share at the orchard ciderhouse. The acres of old, standard apple trees clean the air, capture carbon, provide animal habitat, and of course - produce an abundance of delicious apples perfect for crafting into cider. Good food paired with good cider, set in a third-generation transitional organic orchard is at the heart of the vision. The new farm-to-table restaurant at Cambium is simple, rustic and refined.
