Celebrity chef Fabio Viviani is the culinary mastermind behind The Marketplace, an all-you-can-eat buffet presented in a high-end sit-down restaurant style. Diners pay one price and reserve a spot from a kiosk, walk to whatever station you desire, watch your selection being prepared in front of you, and the plate handed to you to take back to your table. Viviani chats further with Palm Springs Life about Marketplace, and what it means for the casino industry.

Although it will have familiar buffet elements such as a set price at entry, it aims to evoke the feeling of being in a high-end food hall with multiple eateries under one roof. Viviani said he was eager to do something in California again. Working on the Marketplace not only let Viviani return to the Golden State, but with a massive project to boot, he said. The new concept will have branded spaces that will function like the stalls of a food hall , rather than more generic dessert and carving stations. Customers will be greeted by chefs and select items off of a menu that will then be freshly prepared. Everything is a quick turnaround, executed in front of the customer. The food portions will individually sized on single serving plates. Think of tapas rather the traditional buffet model of grabbing food out of a serving tray and piling it onto a plate, said Richard St. Jean, Chief Executive Officer of Morongo. After getting their individually sized, made-to-order plates of food, customers then take the items back to their table. Servers will greet them and ask them if they want drinks, cocktails, beer or wine. This rendering shows what the entrance to the new food hall-like space will look like.

Morongo Casino Resort near Palm Springs, California on the Morongo Indian Reservation has introduced self-service technology at an all-you-can-eat dining area, according to a press release. For one price at The Marketplace by Fabio Viviani, guests can enjoy unlimited dining selections at seven stations that represent offerings from different areas of the world. Guests schedule and pay for the dining by day, time, and guest count of their choice at kiosks in front of the restaurant. Earned points, complimentary gifts and other offers can be redeemed at the kiosk and deducted from the dining cost. When the reserved table is available, the guest receives a text alert and checks in with the restaurant host.
I decided to venture out here to see if the casino had bubble craps nearby. And yes they have a We met some family members at Morongo Casino and went to the Marketplace for dinner. I have sampled just about all the offerings at the buffet and can say from experience it truly is a step above! Rather than a traditional buffet where food is on display in big piles at various stations for you to help yourself, The Marketplace is a high-end food hall with seven unique stations featuring a variety of cuisines and flavors from all around the world.

The one thing that we want them to understand is that, quality and consistency is the most important thing. So I think the seven, eight station that we have, are perfect.
