After hop cones are removed from the bine and separated from the unwanted plant material a proportion were diverted away from the kiln. NZ Hops.
Brook House Hops have taken a huge leap forward on the path to sustainability in the farming and brewing industry with the introduction of a revolutionary new hop product that does not require kiln drying. This is of considerable interest to brewers who are looking to produce beers with a much low carbon footprint and reduce the overall environmental impact of their supply chains. Will Kirby, owner and farmer at Brook House Hops in Herefordshire explains the background to the project;. Sometimes this involves using new technology, as we have done on the farming side, and sometimes it is in the way we process and cold-store our hops. Developing Low Carbon Hops supports both of these key aims, and importantly gives brewers another way to improve their own sustainability goals. The current method of drying hops to preserve valuable aromas, flavours and oils uses diesel-fired kilns and happens immediately after hops are harvested. This separation prevents the ingress of unwanted diesel fumes and guarantees purity in the flavour and aroma profile of the hop.

We are a unique business in many ways, but particularly in how we farm our land and the way we use technology to lower our carbon footprint and improve the quality of our hops. As a relatively new farming business we are able ensure that sustainable farming practices are standard practice. We grow approximately acres of hops across two farms and together our sites have over 3km of rivers running through them. As well as creating a stunning setting for our hop yards we recognise that the health of the rivers contributes enormously to the rich and productive soils and terroir that is vital to the final quality of our crops. Our location makes us one of the largest occupiers of riverbank for the Frome in Herefordshire and by growing hops, as opposed to other crops or livestock, we are actively supporting improved river management. Hops naturally require fewer phosphates than other arable crops anyway and by investing in the latest soil mapping data and using more controlled variable rate fertiliser application we are significantly reducing the level of phosphates used on our farms. We are also able to leave a considerable buffer of land between the edge of our hop yards and the riverbank. As a result we are now sequestering well over 70 tonnes of carbon per year.
